Kale is one of natures superfoods, it contains vitamins A&C, iron, fibre, calcium and a load of antioxidants. It can be quite bitter though and so combining with sweet potato and carrot works well.
• 100g sweet potato, peeled and diced into small cubes
• 50g carrot, peeled and diced
• 30g kale, stalk removed
• Knob of butter
• 30g cheddar cheese
Place the sweet potato, carrot, kale and butter into the Quick-Cook and steam for 15 minutes till the sweet potato is tender. Add in the cheese and steam for a further 1 minute then blend for 30 seconds.
